Members of the New York City Board of Health decided yesterday that they will ban the usage of high amounts of artificial trans fats in restaurants and bakeries.

Trans fats are used instead of saturated fats for making pastry in bakeries, French fries, salad dressings and other foods. Trans fats are very rich in cholesterol whose high amounts lead to heart disease.

Health experts found that lowering and eliminating trans fats would not lead to any change in the taste of foods while chefs and restaurant owners highly oppose to this decision complaining about the it and accusing the government of interfering with into free enterprise and civil liberties. They report that the foods will not taste the same, that it will be hard to find the same texture and that it will be more expensive for everybody.

However, this did not stop the board from imposing another rule. Each restaurant including fast food restaurants will have to present calorific value of each meal which will be monitored by the health department’s restaurant inspectors.

The restaurants were given time until the July 1 to reduce usage of oils and margarine. Those who fail to obey the rules will be fined.

National Restaurant Association announced that they would fight these measures legally.
