Eating Disorder being treated with Boost/Ensure drinks

So, basically i am seeing a nutritionist becuase i have a ((only eat vegetables and 500 calories a day)) eating disorder. My nutritionist has slowly added 3 cups of soymilk, an apple, and two Boost drinks (240 calories each) into my diet on top of the veggies that i eatevery day. My real question here is this: What is it with these Boost drinks. Will they make me fat or supply my body with what the disease has cause me to lose. Will i gain weight? Will it be noticible. Are these Boost and Ensure drinks the right way for me to get on track. I am so scared/paranoid! HELP.
