Well, as far as I know, nothing happens to the stomach but some digestive problems could occur although doctors suggest that living without the gallbladder is perfectly normal. Gallbladder serves for storing bile, which is very important for digestion and breaking down of the food.
When there is no gallbladder, the bile that is produced by the liver stays in the liver until it needs to get out to break down the foods.

It seems that bile production is slower when the gallbladder is not there and digestion may take longer time. Bile also lubricates the bowels. So, without enough bile, patients who had their gallbladder removed could experience problems like diarrhea, gas, abdominal pain, bloating, indigestion, constipation.

The liver can be weakened due to bile accumulation.

Now it is important to pay attention to your diet after removing the gallbladder. It is important to eat diet low if fat, high in fiber and avoid refined carbohydrates and hydrogenated oils just like you had to when you suffered from gallstones.
