Why are my legs so sore?

I usually eat 2 or 3 bananas a day. Yesterday I was out of bananas so I went without. The only thing I did differently in my training yesterday was doing deeper squats. My diet stayed the same is it always is during the week minus the bananas . Why am I so sore today? My legs are killing me.
