New study found that cooking or boiling vegetables is not so bad idea since it can preserve their nutritional content. Previous studies reported that raw vegetables are more nutritious but these new studies reported that cooking may increase release of some nutrients. However, more research needs to be done in order to prove that cooking vegetables has more benefits than eating raw vegetables.

During the study researchers evaluated effects of boiling, steaming and frying on nutritional content of carrots, zucchini and broccoli. They found that boiling and steaming saved most of the antioxidant compounds of the vegetables but frying showed great loss of nutritional content of these vegetables. Seems that these cooking methods such as boiling and steaming represent better way in preserving nutritional content of vegetables than frying.

Each vegetable showed specific reaction to various methods of cooking and researchers say that it may be possible to select cooking method for each vegetable in order to preserve nutritional quality. They found that steaming broccoli increased content of glucosinolates which are proved to have ability to fight cancer.
