has anyone had an adverse reaction to the use of Guar Gum in food ? specifically from organic coconut milk?

Guar gum is used in many foods such as soups, beverages, desserts and cheeses.  It is used as a thickening agent.  Some but not all guar gums contain soy protetin.  Some individuals are allergic to soy so if you are you should try to stay away from products that contain guar gum.  The allergic response involves over production of histamine and IgE antibodies that generate the allergic symptoms.  Symptoms include vomiting, diarrhea, cramping, nausea, runny nose, watery eyes, shortness of breath, hives or skin rash.  These systems could be mild or life threatening.  If you are experiencing mild symptoms you can take an OTC oral antihistamine.  If you have a severe reaction you will need to go to the emergency room.  At that time you can probably get some epinephrine to keep at home in case it happens again.  The epinephrine comes in shot form.

Thanks for the information. I didn't know guar gum might have soy in it. Now i wonder what other things may be in it? i was questioning whether i might have allergy to the gum itself..I know it's a fiber that expands in the intestine, but in such small an amount as would be in a can of coconut milk i didn't think it would be a problem..Anyway, thanks very much for taking the time to respond to my post., and for the helpful information.
