i heard about minerals and vitamins as being an important factor in overall health so i was wondering if anyone can explain to me how do these vitamins work. In what way are they helping out? Which foods have the most vitamins and minerals? Does it really help?

Vitamins and minerals are essential in your diet.  Vitamin Bs are coenzymes that activate enzymes that run your metabolic pathways.  They are water soluble and therefore your body doesn't store them to any extent.   You need them everyday.  Vitamin C is an important water soluble antioxidant that protects you from free radicals that cause damage to other molecules.  Vitamins A, D and E have many functions.  They are all lipid soluble and protect you from damage to your cell membranes.  Vitamin K is important for blood clotting.  Minerals are essential.  They play so many roles incuding acting as corfactors that activate enzymes and they are important for maintaining membrane potential particularly for brain cells.  You need a fair amount of calcium, potassium and magnesium.  To bring vitamins and minerals in your diet you need to eat fresh veggies and fruits, lean meats, seafood, nuts and seeds.  Ideally, they should all be organic.  Hope that helps.
