In lieu of doctors not paying attention and assuming that anyone who is overweight is simply someone who eats a lot, My usual 114 pound frame ballooned to 211 pounds, some of which WAS caused by overeating. However, one year of eating crappy in college shouldn't have caused that
So now I eat healthy and can't lose weight at all. My diet has pretty much been restricted to fresh vegetables and pumpkin seeds, in small doses throughout the day. If I eat anything more than that or eat more often, I will gain up to 3 pounds that day and before I'm even done eating it, my blood sugar has spiked and massively crashed leaving me grumpy, depressed, and exhausted/lethargic

Hi Sam,

Your blood sugar should not be spiking and crashing so radically.

If you haven't, see an endocrinologist.  Be sure to explain the radical change in your body over the past year.

A log of your blood sugar readings including the time of day and when you last ate would help.
