Hello I am hoping someone out there can help me. My husband has type 2 diabetes along with congestive heart failure. He is a very picky eater and wont even try a lot of the recipes that I have found related to his health problems. He loves meat and potatoes and is not really big on the sweet stuff. He will not eat anything such as salad dressing, mayonaise, or basically anything white and creamy. He will only eat certain vegetables, such as green beans, pinto or northern beans, corn, lettuce, carrots tomatoes. Does anybody have any suggestions that might would help me?

It's actually a good thing that he won't eat anything white and creamy, because most of what you wrote isn't really good for a person anyway. He does need to open up his palate for veggies though. You can "hide" vegetables in many things if they are pureed. Also one of the more interesting ways of preparing a salad is by shredding the vegetables and then tossing them with a simple oil and vinegar mix. You can even cook some bacon, dice it finely and add it to the salad. It's a new texture, not simply a new taste and diabetics often get bored eating the same old, same old.
