Severe stomache pain, followed by 3 days of mud like bowel m

On march 27th, i woke up with severe stomach pain, knife like pain, in the middle of my stomach around my belly button.

This lasted for 2-3 hours until I had my bowel movement, i had chronic bowel movements for 3 days straight all the way till monday the 30th.
During those 3 days, i had cramping, gurgling, and once and awhile pain.
My bowel movements were runny like mud, looked like paper mache and had sausage casing/seaweed like pieces in it.

anyways, this stopped on monday, for about 24 hours i felt constipated and had the urgency and need to goto the bathroom and pass gas but could not.

on tuesday, i woke up with the feeling of constipation and urgency and could no goto the bathroom, i had breakfast and 1-2 hours later, i went and had a huge bowel movement which was again, muddy and paper mache like.

While this has been happening for 5 days, and up to the point of writing this, i still goto the washroom and have small movements with the urgency and feeling of incomplete bowel movements.

I had thought this could be ceoliac disease but im not sure. Any input would be nice.
