Ok, first off, let me apologize ahead of time, as this may gross you out....Now I know that one way to tell you're ovulating is by the thicker, stretchy cervical mucus. I used to notice I'd get that, especially when i'd go to the bathroom...but I haven't seen CM like that since I was 27. I'm now 31, and can't seem to conceive. I still have regular periods, but like I said...i don't see that tell-take sign of ovulation. Any thoughts on this?

Your CM does change, or should, as you progress through your cycle. As you get older, it can also change.
There are ovulation test kits that can check for the luteinizing hormone which trigger ovulation.
How long have you been trying to conceive? When was your last gyn/ob exam? If you've been trying for more than a year I'd suggest you both see a fertility doctor. You can expect a complete physical including internal exam and blood work. Your partner can expect a sperm count - yes, it can be him too.
