Does cycling work the same as running? Should I be shooting for a long ride, tempo ride, interval ride, and then just easy mid-distance rides on other days? I'm not really planning on racing anytime soon and don't have any concrete goals. I just want to be able to ride farther and faster.

That's pretty much how I do it except that I don't ride over 2 hrs. By cycling standards 2 hrs. isn't very long.

Find a way to work on hills too if you can.

Yes the same training principals apply. You should not start intervals for at least a month to get your cycling muscles in shape.
