I smoke weed, but it is not the answer here... The rest of what you said was great! You do need to calm down the brain and focus your attention. When you're brainstorming let those ideas and to-dos fly as they choose.. But when it's time to get something done you will be more productive doing one thing at a time and finishing everything to completion. This may seem very inefficient because you are the worlds best multi-tasker, but when quality is important and your time is valuable then the accomplishment of completed tasks is not only motivating, but your thoughts are not all floating in your head at once like static. Basically don't let your focus change from here to there to here and all over... The only "accomplishments" are the completed tasks. And there is no need to be a people pleaser either - if you're nearly done a task and you're asked to do something make it your next task & not a reason why you HAD to leave your task undone. Multitasking has its place, but 10,000 partially completed tasks and a scrambled brain is not good for that mental health

BS. My mother is bipolar and does NOT experience "sudden" mood swings. Rather, she goes through long periods of depression or general mania. Her symptoms as a young adult came on as symptoms of both depression, mania, ADD and the like. Bipolar disorder doesn't always mean fast mood swings.

I am high functioning, but have an exhausting 3-7 thoughts going through my mind at all times. It tires me out mentally, causes me to annoy people with constant chatter and subject changes, and sometimes I can't get back to sleep when I wake in the middle of the night. I take an over the counter herb called Vervain (2 pills each morning) after it took 6 days to build up in my system, I cried because my head was quiet for the first time ever. Take it for two months and on the third month, switch to Passion Flower or Gaba, then switch back. This keeps your body from becoming acclimated to Vervain. Other short term fixes are to play a monotonous video game on your phone like bejeweled or tetris, or smoke marijuana. Of course, the later is expensive, illegal in most places and gives you the munchies.
