Are there any folks with celiac here? I am sure you are finding it as difficult as I am to make sure that you don't end up with a nutrient deficiency. So please share your way of making sure you stay healthy and maintain a balanced diet despite the huge list of items that you are supposed to steer clear from. If, taking all of that into account, you still manage to eat stuff you actually enjoy, then I really admire you and would like to learn from you!
