You have laryngitis and diabetes and you want to know what you should eat. For breakfast oatmeal is a good idea with a little bit of fresh fuit. You could have some coffee/tea/milk or juice. For added protein you could have an egg (poached or medium boil is good). The eggs can be made ahead of time and eaten cold. The rest of the day you can have lean meats, seafood, fresh veggies and fruit. Stick right there and you should be fine. It keeps life simple. Just stay away from high sugar foods. Things like bake potatoes are okay (complex carbs). I particularly like acorn squash, spaghetti squash and butternut. To me these are the best baked potatoes. There are full of antioxidants and vitamins.
