When I started the diet I was in my 3rd day when I had an emergency & had to leave the country for 2 days, of course dieting was the last thing on my mind, but when I got back on track, should I start back to day 1 of the diet or day 4?

I suggest starting over. Your body probably isn't used to the diet yet, so if you go straight to the fourth day, you may lose some benefits.
