Our family has been experimenting with traditional food and cooking everything from scratch for a while, among other things because my son was found to have a bunch of allergies that cause the need to avoid processed foods. I know most people eat tofu, but I have never really considered if it is easy to digest. I recently saw a recipe to make my own tofu, and I would like to try it, but first of all I would appreciate some info on this. Thanks!

Definitely! As you will notice from your tofu recipe, all fibres are removed from the soybean during the manufacturing process and as a result of this, tofu is easy on the digestive system. I imagine that making tofu yourself is a long winded and complicated process, but you will end up with a product that is very good for you. Do choose GM free soy beans though!
