We need something that is gentle and relaxing and keeps our joints and muscles flexible. Kind of a stress-buster, too.

Ditto on anything from Yoga Journal. I started out with the AM/PM tapes and still use them a lot when I don't have time for a longer one. The AM one is pretty easy but it'd be really good for you especially since I am betting you wake up stiff and achy like I do, works wonders for that. The PM is a bit trickier, but I tell you, it just melts the tension, I can barely hold my head up during the last bit because I am so relaxed. Definitely worth it.
I have the practice series and I can tell you, some of the tapes are pretty advanced. The stress relief for beginners is a good one, and you can get a lot of them on half.com really cheap. That's where I got most of mine.
Stay away from Bryan Kest until you're more into yoga--his are tough but they're great workouts when you get used to them.
