Can a chicken allergy cause mild, yet irritating, itching and swelling of the throat and tongue?

Yes an allergy can cause those symptoms. It could be from something besides chicken too.

The allergy only seems to happen when I eat anything using chicken or chicken broth. No chicken noodles. Not even frozen chicken patties which I know is not wholly chicken and that in itself makes me wonder if it could be chicken or chicken byproducts?

Or something in the chicken.
Broth, store bought, can contain preservatives. Most chicken is fed antibiotics in their feed and it remains in the chicken when we eat it.
We really don't know what we're eating nowadays.
