[1] It depends what you mean by a virgin whether you would consider her a virgin. But I think your girlfriend is being honest with you about her previous sexual contact, and you should respect her for that.
[2] Technically and essentially a virgin is someone who has not had sexual intercourse, irrespective of the state of the hymen. However, many consider the hymen (sometimes called the maidenhead) to be evidence or proof of essential virginity, even though the hymen can be ruptured by means other than sexual intercourse; so it is no real proof.
