Wow, it seems like you spend a lot of energy preparing your meals. I don't have the energy to do that. When I'm at work I down a protein shake, and at home like over summer vacation I eat salad for lunch with gnochi and pesto and some granola at times when I need a snack or white cheese popcorn , a bowl full or so? I know the sodium makes me bloat, but I can't completely eliminate salt from my diet. Iodized salt I hear is good for preventing a swollen gland in the neck area called goiter. Oh well, I can only try so much with my meals at work. I may start bringing smoothy meal all blended up> I saw another teacher at work do that, and she's tall and thin...

I love cooking... but I also think in terms... if I grill chicken breasts today, I always grill one piece more and then make a cesar's salad the next day for lunch, so thinking/planning about food saves a lot of time. making sauces at home is actually rather quick - most meals that I make are prepared in 30 minutes tops.
