I'm very concerned about the behavior of my semen, I'm pretty certain i produce a normal amount, but i find the consistency of it changes after about 30 seconds or so, it goes from being thick and stringy (only way i can think to describe it) to practically water, It pretty much clears.

I'm almost certain this is a sign of infertility, or am I worrying about nothing?

volume of seman has little to do with fertility. semon normally breaks down to a more liquid almost water state. it may seam emberasing, but a simple look at the juice by a doctor will tell you if you have a loaded cannon. i assume you want kids or you would be concerned. I can attest kids are a great blessing and if thats what you want, get it checked out. If your'e just worried about the consistency of the semon, it sounds normal to me
