I have never made risotto before though I do LOVE a good risotto at a restaurant once in a while. The fact that the cooking process is supposed to be extremely complicated is not actually encouraging me to try it! But I have finally caved and I want to try and make a risotto tomorrow night. It's going to be with mixed mushrooms. What herbs do you think I should add to a mushroom risotto?

Mushroom risotto is a great choice! That is a real classic, and will be liked by everyone who tastes it. If you do not make a total mess of it, that is! :-) But really, that should not happen as risotto is really not as complicated as it sounds. I think that garlic is a must, and then add bay leaves, thyme, oregano, parsley and don't forget some lemon zest to spice it all up!
