A nutrition facts label is required on most pre-packaged food in North America. How would someone go about creating one for one of their products?

I think those labels are made based on 2000 kcal diet. Do you know the exact ingredients of your product? If so you can calculate the amount of calories and RDI ( recommended daily intake).
If you do have all the data you can submit it to FDA (Food and Drug Administration) for a review.
If you're asking about the technical side of things, most of the barcode generator programs also offer nutrition fact labels creation. Most of the time, you only need to adjust a template. But, the FDA is in charge for veryfing that your product has the ingredients stated on the label.
I think you should check FDA.gov to see what are the requirements - they probabby differ from product to product. I'm curious about this myself, I'd be thankful if you shared what you find out. What kind of a product are you thinking of?
