I am having a similar problem. Mucus build up in the back of throat causing me to gag and even when it does drain it's so thick it gags me. The doctor prescribed a couple of medicines for me but I don't think they're helping much. One doctor told me to take mucinex. I began taking 600mg twice a day and it helped some. Since it was still very bothersome I thought I would increase the dosage. I found a no name brand of guaifensin, the same medicine in mucinex, and began taking 400mg every 4 hours. It helped me quite a bit. I don't know how long a person can take this dosage of guaifensin. I am going to go to the doctor and talk to him about it.

FIXED MY PROBLEMS. An Anesthesiologist irritated my throat during hip surgery and then I threw up and stomach acid got onto the irritation and my throat almost closed shut. Thick mucus in my throat would choke me numerous times per day and night. My doctor did six throat dilations over the next two months and had me on Protonix ( Pantropazole) for two months to prevent stomach acid from moving up my esophagus. I was extremely nauseous from the medication and hence didn't eat and hardly drank. My weight went from 144lbs down to 110 pounds. I told my doctor to get me off of the medication and he did. I put two bricks stacked under the legs of my headboard to raise it about 5 inches. This incline kept stomach acid from rising up my esophagus. Just like thinning out cake batter with more water, I drank copious amounts of apple juice so that I wasn't dehydrated, and my mucus became thinner. Dehydration causes thick mucus. Get the one apple juice which supplies 6% of potassium and 80% vitamin C like Seneca Apple Juice. Don't take products like Musinex, which only hides the problem. Getting off the medicines caused me to not be nauseous and I could eat again. Drinking apple juice fixed my dehydration problem so that I could swallow properly again. It worked for me, and I hope these suggestions work for you.
