Had a request for this recipe. I could personally eat this casserole all by myself !!

Broccoli Bake


2 boxes of frozen chopped broccoli
1 can cream of mushroom soup
1 "scant" cup of mayo
2 eggs, well beaten
1 cup grated sharp cheddar cheese
1 medium onion chopped
1/2 stick of butter
1/2 package (8 oz) of Pepperidge Farms herb stuffing
salt and pepper to taste

Preheat oven to 350

Cook broccoli and drain well
In a large bowl mix soup, eggs, mayo, onion, salt and pepper.
Add chopped broccoli, pour into casserole dish.
Sprinkle the grated cheese over this.
Melt the butter, add stuffing and mix well, sprinkle over broccoli mixture

Bake at 350 for 45 mins, serves 6
