Please post a good dessert recipe that you love--maybe healthy, maybe low-fat, maybe both, maybe neither!

This is one of my favorites and can even be made for diabetics. It's also low fat depending on your ingredients and quantities you use. This one is super easy and satisfying.

Triple Layer Party Pie by Joanna Lund

1 4-serving sugar free instant butterscotch pudding mix
1 1/3 cups nonfat milk powder (divided)
2 1/2 cups water (divided)
1 6-ounce graham cracker crumb pie crust (reg or choc)
1 4-serving sugar free instant chocolate pudding mix
1/2 cup light whipped topping
2 tablespoons chopped pecans
1 tablespoon mini chocolate chips

1. In a medium bowl combine butterscotch pudding mix, 2/3 cup dry milk powder, and 1 1/4 cups water. Mix well using a wire whisk. Pour mixture into pie crust. Rinse bowl to reuse. Combine dry chocolate pudding mix, rest of dry milk and rest of water. Mix well using a wire whisk. Pour over first layer. Refrigerate about 15 minutes. Before serving, spread whipped topping over top sprinkle with pecans and chocolate chips. Refrigerate until ready to serve.

2. Note: regular milk may be used in place of powder/water mix. Also, you can use regular instant pudding.


1 cup white sugar
2 tablespoons all-purpose flour
2 1/2 teaspoons salt
1 3/4 cups unsweetened pineapple juice
2 eggs, beaten
1 tablespoon lemon juice
3 quarts water
1 tablespoon vegetable oil
1 (16 ounce) package acini di pepe pasta
3 (11 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple tidbits, drained
1 (20 ounce) can crushed pineapple, drained
1 (8 ounce) container frozen whipped topping, thawed
1 cup miniature marshmallows
1 cup shredded coconut

1 In a sauce pan, combine sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat; add lemon juice and cool to room temperature.
2 Bring water to a boil, add oil, remaining salt and cook pasta until al dente. Rinse under cold water and drain.
3 In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows and coconut. Toss and serve.

I leave out the marshmallows when I make it though. Good stuff if you can make up a different name for it. ;) Kids don't think eating frog eyes is fub.


Strawberries dipped in melted semi-sweet chocolate

Buy a bag of semi-sweet chocolate morsals.

Melt them

dip fresh strawberries (or bananas, or melons, etc.) in it.

Put in fridge.



Chocolate Orange Layer Pie(NOT low-fat, but good for special days) 1 Pillsbury pie crust Chocolate Filling: 1/2 c. sugar 3 tbsp. cornstarch 1/4 tsp. salt 2 tbsp. milk 2 oz. unsweetened chocolate 1 c. milk 2 egg yolks, slightly beaten 2 tbsp. margerine or butter 1/2 tsp. vanilla Orange Filling: 1 tsp. unflavored gelatin 1/4 c. frozen orange juice concentrate, thawed 1 c. whipping cream 1/4 c. powdered sugar Heat oven to 450. Bake pie crust according to directions. Cool completely. In small bowl, combine sugar, cornstarch and salt; mix well. Stir in 2 tbsp. milk. Set aside. In med. heavy sauce pan over low heat, melt unsweetened chocolate with 1 cup milk, sitrring constantly until smooth. Blend in cornstarch mixture. Cook over low heat unti mixture is thickened and boils, stirrring constantly. Boil 1 minute. Blend about 1/4 cup mixture into egg yolks. Graduallly stir in yolk mixture into hot mixture in saucepan. Cook over low heat for 3 minutes, stirring constantly. Remove from heat; stir in margerine or butter and vanilla. cover surface with plastic wrap. Chill until just cool, about 1 hour. Spoon chocolate filling evenly over baked pie crust. In small saucepan, combine gelatin and orange juice concentrate. Stir over low heat until gelatin dissolves. Cool slightly. In small bowl, combine whipping cream and powdered sugar; beat until firm peaks form. Fold orange juice mixture into whipped cream. Spread evenly over chocolate filling. Chill 1 hour.. Store in fridge. ~I garnish this with canned manderin orange slices half dipped in melted chocolate. For some reason, this has become our dessert after Easter Dinner.


Strawberries dipped in champagne is awsome too....I do love strawberries dipped in chocolate too.


Printed on the lid of Smucker's Natural Creamy Peanut Butter: 3.75 cups powdered sugar 0.5 cups butter 1 (16 (Oz.) jar S. N. P. B. 3 cups crispy cereal or corn flakes (I use Wheaties ) 1 (16 Oz.) pkg. of semi-sweet chocolate chips
  1. Melt butter over low heat in sauce pan.
  2. In a mixing bowl, blend P. B. and sugar. Add the melter butter and continue to blend.
  3. Stir in cereal and spread evenly onto a 9"x13" pan.
  4. In a separate saucepan, melt the chocolate chips over low heat.
  5. Spread melted chocolate evenly over bars. Refrigerate to cool.
  6. Cut into bars.
Makes approximately 30 bars.
