Maybe to late, but, I have this happening to me . Started in my 20s but happens more often now. I do have copd. I never know when it's going to happen. Usually daytime, I have a rescue inhaler, if I can use it time I feel it coming on, I'm usually ok.

It is sleep apnea. When you sleep your brain doesnt connect fast enough and you stop breathing for a short time. This probably happens a lot but most times you dont notice. You notice only if you wake up before your brain sent the signal to breath. Keep calm. Dont be frightened just wait a few seconds and your breath will come back. This happened to both my husband and brother so I asked a registered nurse and this is what she told me. It is scary waking up not being able to breath but if you get frightened it lasts longer. Just relax tell yourself you will be fine and your breath will come back.

ive just had this earlier today for the second time, but the first time was last year and i freaked out and stayed hydrated and it never happened again, and it went away, it was like a once off. until today.
i think covid19 created a mutated version of saliva that blocks its own path and the saliva glands in the mouth that keeps it from doing its job. saliva gets thick and sticky, im always having to spit it out as it just creates coughing symptoms and a blocked snotty nose.
the first time i had it, i ninja rolled out of bed unable to breath, tried to drink water but that didnt work, so i poked my finger in the back of my mouth to create a gap for air, as my nose was also blocked(just like a blocked nose).
it worked and all that was within 10-20 seconds, as i can only hold my breath for about 1min.
with todays event, i was watching a movie in bed, and must of fell asleep without checking my hydration level. as i drink between 5L to 8L of water within a 24hour time frame.
anyways, i suddenly woke up trying to breath and it wont go through my nose, so i opened my mouth but it was dry and sticky with no air passing with my lungs just not expanding or deflating but i can feeling it trying. i ninja rolled out of bed(just get on your feet), about 10seconds has passed now.
i didnt try to pick up the glass of water as it didnt help the first time so i just poked my finger in my mouth to create the gap, i suddenly panicked its not working and its around 20-30seconds since i got out of bed to try to breathe standing up.
i continued to poke the back of my throat, with no luck of breathing and my lungs just hurt from trying. i quickly induced vomiting to open the gap from the inside.
i was lucky to get my first intake of air at around 50-60seconds but the one breath(feels like breathing through a squeezzed straw) wasnt enough but it went through.
from this moment it wasnt over yet as the gap wasnt big enough to bypass a proper breath in, no out motion yet, but im breathing in, still panicking as its only through a tiny gap(like through a straw but squezzed), i start to shake my shoulders up and down and around to help movement, unsure if its helping, i attempted to vomit again, as my finger has been in my mouth this whole time trying to open the gap and keep it open to breath in.
i didnt vomit but it did open the gap to a point that i can take a full breath in, so i can breath out.
once i got my breathing back, straight after that, it was like nothing happened and my nose unblocked itself, but didnt when my mouth had the multiple breathe in attempts.
next time if this happens, il definitely take a gulp of water and keep my head up, put my finger in my mouth and try to open the gap, instead of induce vomiting. as todays event felt like i was running out of time and the multiple breathes in and no out motion was terrifying.
why do i drink so much water? because i cant sleep when my mouth keeps drying out.
before covid19 i use to only drink between 2.7-3.7L and my urine is always clear.
now i count how many times i urinate than drink water.
when i get headaches, i think about the count and drink more water until the headache goes away, this always works for me.
