My 11 yr old daughter started having the same symptoms about 1 year ago. Everytime she ate Italian sausage either home cooked or from an Italian restaurant she would wake up early the next morning sick. Her symptoms were always vomiting & diarrhea. She would experience loss of appetite & had limited mobility without vomiting. Since we do not eat Italian sausage very often, it took me a while to identify the problem. Once I realized what was triggering her symptoms I told her that she could no longer eat Italian sausage. She had a recent episode at school about 1 month ago, we were unable to confirm she ate Italian sausage. I have made an appointment to have her tested for food allergies after one of my coworkers suggested that she may be allergic to fennel. I think it is time we all know her food allergy before something more serious happens.

I can eat pizza sausage and such, but after eating brats (or sausage that tastes like brats) I get extreme abdominal pain, cramps, gurgling, bloating, etc. that lasts for about 12 hours. Even one bite can cause this. I don't know if it is an allergy or an intolerance or maybe just the grease. Anyone have any idea?

That is exactly what I'm experiencing now. Did you ever find out why?

I made Italian sausage and peppers 2 nights ago. I made them for the next day but sampled them the 1st night. I experienced extreme itching all over my body and very bad heartburn. I didn't associate it with the sausage that night. Last night I had the sausage for dinner and the reaction was terrible. My whole body itched and I had extreme heartburn and gas. I have never had an experience like this before.

I once ate a lot of sausage on a camping trip. I was VERY gassy later the same day (it was HORRIBLE) and did not stop for many hours. I never made a connection. Recently I made myself the most delicious Italian sausage tortellini soup with spinach. After eating it I felt like I had a jagged rock in my stomach and had gas, naturally. I also felt sick. I put 2 and 2 together and started googling this food and found this forum. I want to add that breakfast sausages do not give me any reactions at all. On my camping trip I remember having 2 different kinds of sausages, one I don't remember, the other was a kosher type. It was many years ago so I can't remember what exactly they were. I can certainly live without this food but better to know the real source of the problem for obvious reasons. I did take a food allergy test and lobster came up as the worst (moderate reaction). Then came the mild reactive foods: milk, gluten, every kind of nut you can name, beans etc. I only have an actual reaction to gluten, none of the others listed on my test. After limiting the gluten and milk my face did clear up. I am thinking whatever is in the sausage is not a food/additive that is tested for in these tests. It takes a lot of gluten to give me a reaction (similar to the sausage) so I have to rule that out. I ate some whole fennel seeds with no reaction (so far). If any of you have any updates on the sources of your sausage reactions I look forward to seeing them. Thank you!

I believe it is gluten in the sausage.

Just read an article that one of the allowable additives in processed sausage is formaldehyde. I am highly allergic to this chemical and since I have heart problems and reduced blood flow to facilitate digestion i had to give up sausage and got dogs in addition to any fatty meats.

My theory is that if you buy breakfast sausage links from the store they don’t refrigerate them properly and that causes us to get sick. I get diarrhea after eating breakfast sausage from Walmart. My stomach used to get real upset too anytime I ate their ground beef or chicken literally any meat I bought from Walmart. I read online that sometimes their refrigerators go down at night and they have someone on call that will come fix them but by the time they get there the meats been sitting unrefrigerated so long it can cause bacteria growth in the meat so when we eat their meat we gets sick. I don’t buy any meat from Walmart anymore. I started going to a local butcher instead and I have never had problems with red meat or chicken again. They unfortunately don’t sell sausage links only ground sausage. But I bet if they sold sausage links too it wouldn’t make me sick like Walmart’s.
