I don't believe it's the milk that caused your stomach issues. I too drank the Carnation instant breakfast and it caused frequent diarrhea EVERY time.
I have also been having a lot of gurgling all day long. I also feel nauseous from time to time. Probiotics seem to help but only so much. I just ate steak and potatoes for dinner. Immedeatly after i had very bad gas and stomache pain followed by deahrea. It is getting me worried

Gluten was the problem for alot of people I know . It can cause all those issues and more . Try looking up celiac diets / gluten free diets .

Perhaps Prilosec would help. My stomach has been sensitive and is only getting worse. Here is what I have found.
Milk and dairy is a no-no.
Eating small meals rather than stuffing myself is required.
Drank Carnation Instant Breakfast and it caused HOURS of discomfort-so that is out-forever.
Sometimes when my stomach gets really irritable and stays that way for days, Prilosec is needed and does bring relief in a day or two.

Kat, you said that you only eat wheat, but wheat, rye, and barley are all Gluten. Gluten can cause your symptoms and worse. Try taking Gluten completely out of your diet for 3 months and see how you feel. Good job taking soda out; that’s a stomach killer. Be careful gluten is in a lot of sauces, drinks, etc. Try shopping for gluten free pasta, flour, food. Add meat back slowly, just be careful with what you put on it. Good Luck!!
